Ingredients for 100 kg

  • Breadcrumbs 8 kg
  • Water12 kg
  • Ground meat60 kg
  • Eggs5 kg
  • Onion, finely diced8 kg
  • Seasoning mix (salt, pepper, herbs)1,5 kg
  • Cream5 kg

Instructions

  • Add breadcrumbs and water to the kettle and let swell while mixing
  • Start mixing in Forward mode, speed 40, for 5 minutes
  • Add all remaining ingredients, including ground meat, in 1-2 additions
  • Mix at Auto-Reverse, speed 60, for 3 minutes or until uniform
  • Avoid overmixing to retain a tender texture
  • Chef's note: Avoid filling the kettle to the rim when working with dense meat mixtures. For the best texture, mix just until uniform. Additional flavorings like garlic, paprika, mustard or cheese can be added.
