Cooking rice in a Genier kettle is as simple as it is reliable. With automatic water fill and long-pause mixing, the rice cooks gently and evenly without breaking grains. Once ready, excess water is drained with ease using the integrated strainer plate. This method guarantees fluffiness, consistency, and speed for mass service environments.

Ingredients for 100 kg

  • Rice26 kg
  • Water78 l

Instructions

  • Add 78 l of water to the kettle using the automatic fill
  • Set temperature to 90°C and start mixer in forward direction, speed 10
  • Once the water is hot, carefully add 26 kg of rice
  • Continue cooking at 90°C for 20 minutes using forward with long pauses (10-20 seconds) at speed 10
  • When the rice is cooked, attach strainer plate and pour of excess water
  • Rice can now be served or cooled for later use
  • Chef's note: For fluffier rice, avoid stirring during the final minutes of cooking. If reusing the kettle for portioning or cooling, drain thoroughly and adjust kettle tilt to reduce water retention. You can also start a second water fill during draining to rinse the rice.
