Coq Au Vin

The flavour of Coq au Vin comes from slow cooking: red wine, herbs, garlic and mushrooms simmering together until the chicken is deeply tender and the sauce is rich and aromatic.

In the Dieta Mixing Kettle, this process is easy to manage in large batches. Consistent heat and gentle stirring bring out the depth of flavour while keeping the texture just right.

Instructions

  • Place hook and folding tool in mixing kettle, pre heat the kettle
  • Add Oil, Bacon, mixing 60 forward only, time 50 min
  • Add onion, mushrooms, carrot and garlic, mixing 40 forward only, time 5 min
  • Add chicken, set mixing 40 forward only, time 8min
  • Add cognac, red wine, water, salt, thyme, rosemary, bay leafs, set food temperature 96˚C, set mixing forward only speed 40, time 35 min
  • Finish with chopped parsley
