Ingredients for 100 kg

  • Dried peas30 kg
  • Water69 l
  • Salt600 g
  • Marjoram50 g

Instructions

  • Add dried peas to the kettle
  • Add enough water to cover the peas, then add 10-20 cm layer of ice cubes depending on kettle depth
  • Close the lid and let soak overnight
  • The next day, automatically add remaining water (up to 183,600 l total)
  • Set kettle to 95°C and start mixer at speed 20, forward only
  • Simmer for minimum of 1,5h, stirring occasionally
  • Season with salt and marjoram at the end of cooking
  • (Optional) Garnish with a fresh pea pod or marjoram when serving
  • Chef's note: To ensure even texture and reduce cooking time, soak peas with ice overnight. For thicker soup, reduce water slightly. This recipe is naturally vegetarian and ideal for large-scale production.
