Ingredients for 100 kg

  • Basmati rice39,2 kg
  • Water58,2 kg
  • Oil2 kg

Instructions

  • Mount the hook tool on the mixing kettle
  • Add the water and oil into the kettle and let the rice soak for at least 30 minutes
  • Start cooking, set the kettle temperature to 92°C and wait until it boils
  • Lower the temperature to 88°C and cook for 12 minutes, make sure the lid is closed
  • Let the rice sit for 20 minutes after cooking

    • This is basic program on pilaf rice and you can easily add your favorite spices and seasonings for you like.
    • You can start by sautéing the onion, rice and spices in oil and continue cooking according to the instructions.
    • If you want to wash rice to reduce the starch in the rice, you can easily use a kettle and a mixing hook to wash it without breaking the rice structure.
