Instructions

  • (Optional) Soak rice in cold water for a few hours in a refrigerator to save energy and reduce cooking time
  • Add cold milk and rice to kettle
  • Start mixing at Auto-Reverse, speed 70-100
  • Set heat to 96°C. Once the temperature is reached, reduce mixing speed to 20-30
  • Let simmer with continuous mixing for 45-50 minutes
  • Add salt and sugar (if used) at the end and mix well
  • Chef's note: Soaking the rice in advance can reduce cooking time and save energy. Adjust sugar depending on whether the pudding is served sweet or as a base for savory toppings
