Instructions

  • Place standard tool on mixing kettle
  • Set core temp 118°C
  • Add butter and onion on mixing kettle, set mixing 40 auto reverse slow, time 5 min
  • Add potato, fish stock, all spice, set food temp 96°C set mixing 40 forward only, time 10 min
  • Add salmon cubes and salt, mixing forward only 40, time 3min
  • Add cream and dill heat 2 min and serve
