Ingredients for 100 kg

  • Semolina6 kg
  • Sugar8 kg
  • Blackcurrant juice concentrate6 kg
  • Water80 l

Instructions

  • Add the juice concentrate, semolina and sugar into a cold kettle
  • Automatically add 164 l of cold water
  • Start mixing with Auto-Reverse at speed 100 for 2 minutes until ingredients are well blended
  • Set temperature to 96°C. Mix forward at speed 60 for 5 minutes while cooking
  • Begin chilling process. As the temperature drops, increase mixing speed to incorporate air.
  • The volume will increase and the texture becomes fluffy. Avoid overfilling due to expansion
  • Chef's note: Always leave extra room in the kettle for volume expansion during whipping. Use the whipping tool if available to increase air incorporation and final volume by up to 50%.
